What is Valentine's Day without chocolate?
Cut into heart shapes and sprinkled with a dusting of icing sugar, these are moist and not too sweet. They make a nice presentation on a dessert tray or a happy surprise in a lunch bag.
Valentine Brownie Hearts
7 ounces unsweetened chocolate
1 cup butter
2 cups granulated sugar
1 teaspoon vanilla
1 cup all-purpose flour
¼ teaspoon salt
In a double boiler or metal bowl, placed over a saucepan of almost simmering water, melt the chocolate and butter. Stir frequently and do not let water boil.
Once chocolate has melted, remove from heat and let cool.
Meanwhile, with an electric mixer, whip eggs and sugar together till very light and fluffy – about 5 minutes.
Add cooled chocolate to egg/sugar mixture.
In a separate bowl, mix together the flour and salt.
Add to chocolate batter and blend well.
Pour batter into a greased and parchment-paper lined 9" x 13" pan.
Bake in pre-heated 350F oven for about 30 minutes and wooden tester comes out clean.
Let brownies cool for about 15 minutes, then cut out with heart-shaped cookie cutters.
Dust with icing sugar and place in flattened cupcake paper liners.
Yield – 12 large, or 16 small, heart brownies
