Grouse poppers

Grouse are the best. They’re super fun to hunt, super easy to prepare, and easy and delicious to cook. These little poppers are an easy way to eat a grouse breast. Simply season, wrap in bacon and roast until cooked through. All you need is a couple of bevies and you’ve got a great little seasonal party. This recipe scales up easily from one breast, so no matter how many grouse you catch, this recipe should work for you.

Ingredients

  • 1 grouse breast, cleaned
  • Salt and pepper, to taste
  • A drizzle of olive oil
  • 1 jalapeno pepper, quartered lengthwise
  • 2 strips thick-cut bacon, halved
  • 2 tsp honey

Instructions

  1. Set oven at 400 F. Remove the breast from the bone and divide it into two pieces. Season breast meat with salt, pepper and a drizzle of olive oil.
  2. Place one slice of jalapeno on each piece of the breast, then wrap with a half piece of bacon. Place each piece into a cast-iron pan and roast until brown, about 10 minutes. Flip and drizzle each piece with ½ tsp of honey and cook for an additional 5 minutes, or until grouse is fully cooked.
