"I saw your page showcasing local food and I don’t know where to start ( so much local food available) so I thought I’d take a photo of what I used today – Little Red Hen eggs. I love that I can go to my nearby grocery store (Bigway) and buy locally produced eggs.
Here’s the bran muffin recipe I’ve been using for eons:"
Helga’s Bran Muffins
(adapted by Elise)
Pre-heat oven to 400 degrees
Ingredients:
- ¼ cup oil
- ½ cup demerara sugar
- ¼ cup molasses
- 2 eggs unbeaten
- 1 cup milk
- 1 ½ cups bran
- 1 cup all purpose flour (whole wheat)
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¾ teaspoon salt
- ½ cup raisins
Optional:
- Cut up sugared orange peel, or any bits of fruit such as cranberries
- ¼ cup sunflower seeds or pumpkin seeds
- Almonds – one per muffin
Directions:
Cream oil and sugar together, Add molasses and eggs. Beat well. Add milk and then bran. Sift flour, baking soda, baking powder and salt together. Add raisin and other optional fruit and seeds. Place in muffin tin and bake for 15 minutes at 400 degrees Fahrenheit.
