Faster than KD mac and cheese

You can absolutely make a simple cheese sauce in the time it takes to boil water and cook some pasta. Keep in mind that the blue box needs milk and butter as well so the only thing you need for this recipe that is not totally shelf-stable is cheese. Using this as your base you can add lots of stuff without a lot of extra work as well - throw broccoli or peas (frozen of both of these would totally work) in the water while you’re cooking the pasta, or fry up some bacon, any sort of leftover meat, or even roast potatoes. Or not, even kept totally simple this is a total crowd-pleaser.

Ingredients

  • 4 Tbsps butter
  • 3 Tbsps flour
  • 1 1/2 cups milk
  • Salt and pepper
  • 3 cups grated cheese
  • 2 cups dry macaroni

Instructions

  1. Bring a large pot of water to a boil and cook macaroni according to package directions. While the water is coming to a boil cook the sauce.
  2. Melt the butter in a saucepan over medium heat, when melted add the flour and whisk until fully combined. Pour in milk and continue to whisk until the milk begins to bubble, then did cheese and continue to stir until cheese is fully melted and sauce is smooth. Season to taste with salt and pepper.
  3. When the pasta is cooked add it to the sauce and heat through and season to taste with salt and pepper and serve hot.
