Packaged hummus at the grocery store is expensive and full of preservatives. Instead of buying it there, make it at home and save yourself some money! This version uses lots of lemon to keep it super fresh. It’s great for brown bag lunches. Make sure to serve it topped with lots of extra olive oil.

Ingredients

  • 1 can chickpeas, drained
  • Juice and zest of 1 lemon
  • 2 tbsp olive oil, plus extra for drizzling
  • 2 tbsp tahini
  • Salt to taste
  • Pitas to serve

Instructions

  1. Combine drained chickpeas, lemon juice and zest, 2 tbsp of olive oil and tahini in a blender or food processor. Process until smooth. Season to taste with salt.
  2. Serve with pitas drizzled with lots of olive oil.
