Oven roasting is my favorite way to cook a chicken wing at home - both grilling and deep frying feel kind of high maintenance compared to the ease of pan roasting. The final product is crisp and tender and ready for snacking in under an hour. I prefer whole chicken wings, and always choose to leave the tips on. If you don’t like them though, feel free to remove the tips before tossing the wings with the spice rub.
Serves 4
½ dry mustard
¼ tsps ground cinnamon
¼ tsps chili flake
2 tsps kosher salt
½ tsp paprika
1 Tbsp sugar
10 whole chicken wings
Barbecue sauce (optional)
1. Set oven at 400 degrees. In a large bowl, mix together dry mustard, cinnamon, chili flakes, kosher salt, paprika, and sugar. Toss chicken wings in spice mixture then arrange on a sheet tray.
2. Roast for 40 minutes, or until the internal temperature of the thickest part of chicken wings reaches 165 degrees. Let cool slightly before serving, and drizzle with barbeque sauce if desired.
