Mini Biscuit Pizzas

1 lb ground beef                                                      

½ lb lasagna noodles                                              

two 6 oz. cans of tomato paste                                               

1½ cups hot water                                        

1 medium white onion chopped                   

2 garlic cloves, minced

¼ tsp pepper

½ tsp rosemary

1 Tbsp Minced parsley

2½ Tbsp salt

2 tsp oil

2 eggs

1 pint of cottage cheese

½ lb of mozzarella cheese, sliced

¼ cup parmesan cheese

Cook noodles in salt water for five minutes. Drain. Heat oil in skillet. Cook onion and garlic. Add beef and seasoning and cook. Add tomato paste and water. Simmer for 5 minutes and set aside.

Blend 2 eggs with 1 pint of cottage cheese in a bowl. In 9x13x2 baking dish put a thin layer of meat sauce and half the noodles, all of the cottage cheese and egg mixture, and ¼ lb mozzarella cheese. Repeat with remainder of the meat sauce, noodles and mozzarella cheese. Sprinkle with ¼ cup parmesan cheese. Bake at 350ºF for 30 minutes. Serves 8.
