Sweet potato fries are fast and easy and feel vaguely healthy, which checks all the boxes for something you want to eat in the middle of a Yukon winter. Please trust me about the fancy mayo, because while it may seem that cocktail sauce does not belong with mayo, I can assure you that it does.
Sweet Potato Fries With Fancy Mayo
Ingredients
- 1 large sweet potato, cut into 1/4-inch fries
- 2 tsp garlic salt
- 1 tsp smoked paprika
- 1 tsp brown sugar
- 4 Tbsp olive oil
- 1/4 cup mayonnaise
- Sriracha, to taste
- 1 Tbsp cocktail sauce
Instructions
- Set the oven at 425℉. Mix together garlic salt, smoked paprika and brown sugar. Toss the cut sweet potatoes in the olive oil, then sprinkle the spice mixture on top. Use your hands to toss the sweet potatoes so that the spice mixture coats all of the fries.
- Lay the potatoes out on a lined baking sheet and bake for 15 minutes, then remove from the oven and flip all of the fries. Bake for an additional 5 minutes or until browned.
- In a bowl, mix together mayonnaise, sriracha and cocktail sauce, and season to taste with salt and pepper.
- Serve fries along with fancy mayo.
