Ingredients

  • 1/4 cup butter
  • 2 shallots, finely chopped
  • 2 green onions, finely chopped
  • 2 onions, finely chopped
  • 1 bay leaf
  • 1/2 cup white wine
  • 3/4 cups sugar
  • 1/2 cup apple cider vinegar
  • Salt, to taste

Instructions

    1. Melt the butter in a large cast-iron skillet over medium-high heat. Add the shallots, green onion, onion and bay leaf and cook, stirring often, until onions are soft, about 10 minutes.

    2. When the onions are soft, add the white wine and continue to cook until the liquid has evaporated. When the liquid is gone, sprinkle the sugar over the onions and cook without stirring, until the sugar turns to a brown caramel, about 15 minutes.

    3. Add vinegar and continue to cook, while stirring, until the jam is thick, about 10 minutes. Season, to taste, with salt.
