Duck, Boursin, and arugula sandwiches
This delicious meal builds on the recipe for simple shredded duck, which appeared in the Dec. 16 issue of What’s Up Yukon.
Ingredients
- 4 slices bread, toasted
- 1/2 wheel Boursin cheese (any flavor you fancy)
- 1 cup shredded duck
- 1/2 cup baby arugula
Instructions
- Place shredded duck in a frying pan over medium heat and gently cook until the edges of the meat begin to darken and brown.
- Place bread on cutting board. Spread each slice with Boursin cheese, then top with the warmed duck, followed by arugula. Serve immediately.
