Fried Rice With Garlic, Tofu And Scallions

Ingredients

  • 2 Tbsp neutral oil (canola, vegetable, grapeseed)
  • 6 cloves of garlic, sliced
  • 1 block firm tofu, diced
  • Salt and pepper, to taste
  • 2 cups cooked rice
  • 2 Tbsp chopped scallions
  • 2 Tbsp butter

Instructions

    1. In a large cast-iron skillet, heat the oil until shimmering. Add the garlic and cook, stirring often, until the garlic begins to soften, about 3 minutes. Add the tofu and stir, to toss, with the garlic; then season, to taste, with salt and pepper. Let the tofu and garlic cook undisturbed for 4 to 5 minutes or until the tofu is browned on one side.

    2. Add the rice and scallions to the tofu mixture and continue to cook and toss until the rice is separated and incorporated with the tofu. Add the butter to the rice and toss the mixture with a spatula until the butter is melted. Serve hot with lots of condiments: soy sauce, chili oil, mayonnaise, maggi sauce, etc.
