Broccoli can feel a bit drab – and while roasting it won’t magically turn broccoli into a perfect gooey, cheesy, pizza it will give it some extra pizzazz that is perfect for a simple weeknight meal. Or you could just order that gooey pizza. Up to you.

Garlic roasted broccoli with lemon

Roasting broccoli will give it some extra pizzazz that is perfect for a simple weeknight meal.

Ingredients

  • 4 large broccoli crowns, sliced into large florets
  • 5 garlic cloves, halved
  • 1/4 cup oil
  • Salt and pepper, to taste
  • 1 lemon, halved

Instructions

    1. Set the oven at 400 degrees. Toss broccoli, garlic, and oil together and season to taste with salt and pepper. Place on a lined baking sheet and roast for 15- 20 minutes, or until broccoli has begun to brown and garlic is toasted.
    2. When cool enough to handle, place roasted broccoli on a plate, drizzle with lemon and adjust seasoning if necessary.4 Bake until batter is golden, about 20 minutes. Allow to cool slightly before serving.
