Roasted sardines with tangerines and shallots

You can find whole sardines in most of the grocery store freezer sections, but they often come with guts and scales. If you let them thaw for 15–20 minutes on the counter, then use a sharp knife along the belly, you can gut them and remove the scales, while they’re mostly frozen, and also avoid most of the unpleasant smells and mess.

Ingredients

  • 4 whole sardines, gutted and scaled
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tangerines, halved
  • 1 shallot, sliced

Instructions

  1. Set the oven at 425℉. Scatter sliced shallots in an oven-proof pan, then place sardines on top. Drizzle with olive oil and season to taste with salt and pepper. Squeeze halved tangerines over sardines, then place in the pan as well.
  2. Place in the oven and roast until sardines begin to brown (about 15 minutes). Serve immediately.
