Sweet spiced carrots and salty brined feta make this a vegetarian sandwich that’s super satisfying. You can serve this sandwich warm or at room temperature, which makes it a great sandwich to take to work or school.
Spiced Carrot and Feta Sandwiches
- 4 carrots, peeled and quartered
- 2 tbsp olive oil
- 1 tsp curry powder
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup crumbled feta
- 2 tbsp cilantro, chopped
- Drizzle of lemon juice
- 4 slices sourdough bread, toasted
- Toss carrots with olive oil, curry, cumin, cinnamon and salt and pepper, and place in a 425°F oven and cook until browned, about 20 minutes. Remove and let cool to room temperature.
- Assemble sandwiches by dividing spiced carrots between 2 slices of bread. Top with feta and chopped cilantro and a drizzle of lemon. Cut in half and serve.
