Seasonal Recipes: Spiced Carrot and Feta Sandwiches

Sweet spiced carrots and salty brined feta make this a vegetarian sandwich that’s super satisfying. You can serve this sandwich warm or at room temperature, which makes it a great sandwich to take to work or school.

Spiced Carrot and Feta Sandwiches


  • 4 carrots, peeled and quartered
  • 2 tbsp olive oil
  • 1 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/4 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup crumbled feta
  • 2 tbsp cilantro, chopped
  • Drizzle of lemon juice
  • 4 slices sourdough bread, toasted


  1. Toss carrots with olive oil, curry, cumin, cinnamon and salt and pepper, and place in a 425°F oven and cook until browned, about 20 minutes. Remove and let cool to room temperature.
  2. Assemble sandwiches by dividing spiced carrots between 2 slices of bread. Top with feta and chopped cilantro and a drizzle of lemon. Cut in half and serve.
