Weeknight Green Sauce

Green sauce will last a week in the fridge.


  • 4 cups mixed herbs (parsley, cilantro, sage, thyme, rosemary, mint, arugula, etc.)
  • Juice of 1 lemon
  • ¾ cup olive oil
  • Salt and pepper to taste


    1. If you’re using herbs with woody bits (thyme and rosemary), remove the tough stems before you process them.
    2. Coarsely chop the herbs then place in a food processor and pulse until finely chopped. Run the food processor on high and gradually add the lemon juice and oil. Let the processor run for 3 minutes then remove sauce and season to taste with salt and pepper.
