Meatballs with cilantro, ginger and fish sauce

Thai-inspired meatballs are a simple mid-week meal. They come together quickly and are cooked in less than 30 minutes. Serve them with a bowl of plain white rice, or try stuffing them into lettuce cups for a healthy, flavourful meal. Any leftovers make a great brown bag lunch.

Ingredients

  • ½ bunch cilantro
  • 1 jalapeno pepper
  • 2-inch piece of fresh ginger
  • 4 garlic cloves
  • 1 shallot
  • ¼ cup fish sauce
  • 2 Tbsp sugar
  • 1 ½ lbs ground meat
  • Chopped cilantro, mint , and scallions to garnish

Instructions

  1. Set oven to 400 degrees F. In a blender or food processor, combine cilantro, pepper, ginger, garlic, shallot, fish sauce and sugar. Process until smooth. Combine garlic mixture with the ground meat and mix until fully incorporated. Form meat into meatballs and place in a cast-iron skillet.
  2. Roast meatballs for 20 minutes, or until cooked through. Place on a platter and top with mint, cilantro and scallions.
