Apple Crisp

Cake:

2 ¼ cups all-purpose flour

1 cup sugar  

1 ½ tsp baking soda

½ tsp salt

2 eggs

1 ½ cups sour milk*

⅓ cup vegetable oil                          

Icing:

14 oz. pk. cream cheese, soften                 

¼ cup butter                                                     

1 cup icing sugar                                        ½ cup unsweetened cocoa powder

½ tsp vanilla                                                   

Mix flour, sugar, baking soda and salt in large bowl. Add eggs, milk and oil. Beat at a medium speed until smooth. Spread evenly in 2 greased 8 inch layer cake pans. Bake at 350ºF for 20 minutes or until cake tester comes out clean. Cool on rack for 5 minutes. Turn out of pans onto rack and cool.      

*To make sour milk combine 4 tsp vinegar with 1 ½ cups milk.

Icing: Beat cream cheese and butter until fluffy. Beat in icing sugar and vanilla until well combined.
