METHOD

1. Set oven at 375ºF and oil a loaf pan. Whisk together both flours, sugar, baking powder and salt, toss shredded cheddar into the dry ingredients then pour both cans of beer over top. Mix with a rubber spatula until the dough comes together with no dry spots, then place in the greased loaf pan.

2. Bake for 45 minutes, then test by poking the loaf with a skewer – the skewer should come out clean. Remove from the loaf pan when it’s cool enough to handle and serve warm with butter.
