- 1 stick butter
- 2 cups all-purpose flour
- 2 ½ tsp baking powder
- 1 Tbsp sugar
- Pinch of salt
- ¾ cups buttermilk
- 1 Tbsp heavy cream (optional)
- Set oven at 375o F. Cut stick of butter into slices and place in the freezer for 15 minutes while oven is preheating.
- In a large bowl, whisk together flour, baking powder, sugar and salt. Remove butter from freezer and using your fingers break butter into the flour mixture until the butter is the size of small peas. Pour the butter milk mixture over the flour and butter and bring the dough together with your hands. Turn it out onto a floured surface and press into a rectangle, cut into 8 even pieces.
- Place scones on lined baking sheet and brush with cream (if using) then bake until golden brown, about 20-22 minutes.
Don't press the dough too thin, you're looking for mile high scones!
