Christmas cake

We have just finished the last of our heavenly-tasting Christmas pudding and I just can’t wait for Christmas to come around again and the kitchen abounds with the cooking smells of Christmas pudding.

Ingredients:
2 cups seedless raisins
1/2 cup grated raw carrots
1 cup of sliced prunes
1/2 cup grated raw potatoes
3/4 cup mixed peel
1/4 cup grape juice
1/2 cup blanched almonds or walnuts
1 tsp baking powder
1/2 tsp soda
1 cup chopped suet
1 tsp salt
1 cup soft bread crumbs
1 tsp cinnamon
1/2 cup brown sugar, lightly packed
7/8 cup bread flour
1/2 tsp nutmeg
3/4 cup grated raw apples
1/4 tsp ginger
1/4 tsp mace

Instructions:
Combine all the fruit together. Mix together suet, bread crumbs and sugar.
Measure and sift flour, baking powder, soda and spices.
Prepare and mix apples and vegetables.
Combine all these four mixtures together. Stir in eggs and grape juice.
Steam, closely covered, for 3 1/2 hours.


Christmas plum pudding

Ingredients:
1 lb flour
1 lb seedless raisins
1 lb bread crumbs
1 lb currants
2 tsp baking powder
1/4 lb mixed peel
1/2 tsp soda
1/4 lb mixed fruit
1-12/ tsp suet
1/4 lb slivered almonds
1 tsp cinnamon
6 eggs, beaten
1/2 tsp nutmeg
1 1/2 cups mixed fruit juices ie: orange, pineapple, etc.
1/4 tsp cloves
1/4 tsp ginger

Instructions:
Mix together flour, sugar, baking powder, soda and spices.
Add bread crumbs and suet. Mix well.
Add fruit.
Beat eggs and add fruit juices. Add more if needed to moisten.
Pack in bowls covered with greased brown paper.
Boil for three hours.
Store in a cold place. Boil for one hour before serving. Serve hot with and preferred sauce.
