If you substituted the bologna with mortadella and the American cheese with mozzarella, you could call this a meaty version of mozzarella in carrozza (which is a real thing and delicious), but bologna is good and American cheese melts really well. So please make these adorable round sandwiches and fry them until they’re golden and gooey, then dip them in yellow mustard and ketchup.
Ingredients
8 slices of bread
4 slices of bologna
4 slices of American cheese
Butter or oil for toasting
Ketchup and mustard, for serving
Instructions
Using a cup or glass, cut out circles from the insides of the bread. Make the sandwiches by layering the cheese on either side of the bologna between the bread circles, then press the edges of the sandwiches together with a fork (or just your fingers).
Over medium heat, melt some butter (or heat the oil until glistening) and toast the sandwiches on either side until crisp and golden. Serve immediately with yellow mustard and ketchup.
