This week is a super simple (but still seemingly posh) sandwich with shredded duck, Boursin cheese, and arugula. This delicious meal builds on the recipe for simple shredded duck, which appeared in the Dec. 16 issue of What’s Up Yukon.
- 4 slices bread, toasted
- 1/2 wheel Boursin cheese (any flavor you fancy)
- 1 cup shredded duck
- 1/2 cup baby arugula
- Place shredded duck in a frying pan over medium heat and gently cook until the edges of the meat begin to darken and brown.
- Place bread on cutting board. Spread each slice with Boursin cheese, then top with the warmed duck, followed by arugula. Serve immediately.
