Garlic roasted cauliflower can be a quick and easy side dish, but toss it with some pasta and grated parmesan and you’ve got a fast dinner. Put a fried egg on it and you’ve got a hearty breakfast. Put it between some toasted bread with melted cheese and that’s lunch. Basically, if you’ve got some of this in your fridge, you’re ready to eat any meal within just a few minutes.

Ingredients

  • 10 cloves peeled garlic
  • 1 small cauliflower, cut into bite-sized pieces
  • 3 tbsp olive oil
  • Salt and pepper

Instructions

  1. Set the oven at 450 degrees. Toss the garlic, cauliflower and olive oil together. Season to taste with salt and pepper. Roast, tossing every 10 minutes until the cauliflower begins to toast and brown, roughly 30 minutes.
  2. Remove from the oven and allow to cool, serve warm or at room temperature. Serves 4.
