- 8 whole herring, gutted
- 2 tbsp olive oil
- 1/2 tsp dried rosemary
- Pinch red pepper flakes
- Juice of 1/2 lemon
- Salt and pepper, to taste
- Toss herring with olive oil, dried rosemary, red pepper flakes, lemon juice and salt and pepper. Cover and refrigerate for 20 minutes while you heat the grill.
- Heat grill to high heat. Place the herring on the grill and cook for 3 minutes. Flip, then cook for an additional 3 minutes. Remove fromt he grill and serve drizzled with lemon juice and olive oil.
When seasoning whole fish make sure to season inside the body cavity as well
