1 grouse breast, cleaned
Salt and pepper, to taste
A drizzle of olive oil
1 jalapeno pepper, quartered lengthwise
2 strips thick-cut bacon, halved
2 tsp honey
- Set oven at 400 F. Remove the breast from the bone and divide it into two pieces. Season breast meat with salt, pepper and a drizzle of olive oil.
- Place one slice of jalapeno on each piece of the breast, then wrap with a half piece of bacon. Place each piece into a cast-iron pan and roast until brown, about 10 minutes. Flip and drizzle each piece with ½ tsp of honey and cook for an additional 5 minutes, or until grouse is fully cooked.
