Bacon-wrapped potato wedges

Honestly, these potatoes make a great side dish or a fantastic little snack with some drinks. In either case, they reheat really beautifully so you can make them and reheat them when you’ve got company coming. Or when you know you’re going to be home a bit late and want something that feels a bit lavish on hand for a fast supper. If you’ve still got some kicking around, the awesome little mixed potatoes from Yukon Grain Farm are perfect for this recipe.

Ingredients

  • 5 small potatoes (make sure they are all a similar size)
  • ½ teaspoon dried oregano
  • Pinch red pepper flakes
  • Salt and pepper to taste
  • 10 strips of thick-cut bacon

Instructions

  1. Set oven at 400 degrees. Cut each potato into quarters lengthwise, then season with oregano, red pepper flakes, and salt and pepper. Make sure to be a bit gentle with the salt as the bacon will add lots of salty flavour.
  2. Cut each strip of bacon in half, then wrap each half around a slice of potato. Place on a baking sheet or cast iron pan and roast in the oven until bacon is brown and potato is soft when pierced with a knife, about 30 minutes. Let cool slightly before serving. Or cool completely and reheat at a later time in a 350 degree oven until warmed through.
