Chipotle sauce
Having a jar of homemade sauce on hand that can act as a condiment, or a glaze, or a marinade can make rushed weeknight meals go much smoother. Chipotle peppers canned in adobo are the base for this simple sauce. These peppers are hot, and smokey and puree to a lovely thick sauce. If you’re using this as more of a glaze add a couple of tablespoons of maple syrup, the liquid makes it easier to spread and the extra sugar will caramelize on whatever you’re roasting.
Ingredients
- I can chipotle peppers in adobo
- 2 tablespoons sugar
- 1 1/2 tablespoons apple cider vinegar
- Zest of 1/2 a lime
- Juice of 1 lime
- Salt and pepper, to taste
Instructions
- Combine chipotle peppers, sugar, vinegar, lime zest, and lime juice in a food processor or blender and mix until smooth. Season to taste with salt and pepper.
- Use to garnish roasted meat, or as a passed hot sauce, or as an added spice in tacos or on sandwiches.
