Jammy Eggs With Anchovies and Bagel Toast

Ingredients

  • 4 eggs
  • 4 anchovies
  • 2 everything bagels
  • 2 Tbsp butter
  • Sliced green onions, to garnish
  • Salt and pepper, to taste

Instructions

  1. Bring a pot of water to a steady boil over medium-high heat. Using a slotted spoon, add the eggs and cook for 6 1/2 minutes. Remove and place in a bowl of ice water for 2 minutes. Remove from water and carefully peel.
  2. Slice the bagels in half and toast, then butter each side and arrange on a plate. Slice each egg in half and place on a buttered bagel, top with anchovies and season to taste with salt and pepper. Top with green onions if desired.

 It can be both the star of the plate and a supporting element to your other bites at the same time. This recipe is more about sharing the most foolproof way to get that soft and jammy center, but topping a quick buttery bagel and adding a few anchovies makes for a great snack.
