Coconut brown sugar rice pudding
Always make extra rice. Having a container of cold rice in your fridge opens up a huge world of quick meals that can be a godsend during a busy week. This superfast rice pudding is a great example of cold rice to the rescue, just a few ingredients and after about 10 minutes, creamy rice pudding is ready to eat while watching reruns on the couch.
Ingredients
- 2 ½ cups cooked rice
- 400 ml of coconut milk
- ½ cup milk
- ¾ cup brown sugar
- Pinch of salt
- Heavy cream, to garnish
- Nutmeg, to garnish
Instructions
- In a pot over medium-high heat combine rice, coconut milk, milk, brown sugar and a pinch of salt. Bring to a simmer, then cook for 10 minutes, or until mixture is thickened.
- Remove from heat and divide pudding between 4 bowls. Place in the fridge until chilled, then top with heavy cream and ground nutmeg.
